Happy St. Patty’ s day to you from all of us here at Cooking Matters!
Did you know that leafy greens contain a high amount of an eye-protecting antioxidant called lutein? Lutein is a compound responsible for the yellow pigment in fruits and vegetables. Lutein works to absorb UV and blue light that is damaging to the macula of the eye. It has been found to reduce the risk of age related macular degeneration1.
This Saint Patrick’s Day celebrate by getting in some lutein through these lutein-rich foods:
- Collard Greens
- Kale
- Spinach
- Broccoli
- Brussels Spouts
- Lettuce
- Artichokes
